Cornalin
AOC Valais
Formerly known as Rouge du Pays, Cornalin is mentioned in 1313 in a notarial deed in the register of Anniviers. A native grape variety that is difficult to work with in the vineyard because of its magnesium deficiencies, it almost disappeared from the Valais in the 20th century. Since the early 2000s, its intrinsic qualities have brought it back into the limelight and it has become one of the wine-growing symbols of the canton of Valais.
A slow maceration lasting 4 weeks gently extracts the colour and tannins responsible for the structure of our Cornalin. This speciality is then matured for several months in vats, during which time it undergoes a second fermentation.
Dress : Deep, intense crimson red with ruby highlights
Nose : A complex, captivating bouquet dominated by aromas of ripe plum, black cherry and morello cherry.
Mouth : Rich, generous flavours, black fruits mixed with subtle notes of grilled meat, long, elegant finish with well-integrated tannins.
