Sweet wines, characterised by their volume on the palate, their smoothness and the complexity of their aromas, require special climatic conditions that only a few Valais terroirs can provide. In favourable years, the presence of Botrytis, a fungus also known as noble rot, can transform excellence into something extraordinary. A great sweet wine that blends the best grapes from plots of Muscat, Sauvignon Blanc and Hermitage.
Selection of plots according to their potential to produce over-ripe grapes.
Assembly Amigne, Muscat and Ermitage.
Vinification Slow, gentle pressing and a single, low-temperature fermentation guarantee maximum softness and roundness, while preserving the finesse and freshness of the aromas. The sugar content of the grapes harvested during the winter is such that fermentation of the sugars into alcohol stops by itself when there are still 60-80 grams of residual sugar left.
Dress Deep yellow with golden highlights.
Nose A sumptuous, complex and fresh bouquet with notes of pear, citrus, honey and candied fruit.
Mouth This sweet wine is characterised by a velvety structure combining acidity and ample, complex, fleshy, coated sweetness. It finishes with aromas of apricot, peach and white fruit.
Ageing potential 5 to 10 years.
Operating temperature : 8-14°.
This wine is the perfect accompaniment to foie gras, fish and shellfish dishes, oysters or a platter of mountain cheeses.⬤
