Heida
AOC Valais
In a literal translation of the Upper Valais dialect, Heïda means old, ancient, in reference to the time before evangelisation, pagan times (Wolf, 1886), an epithet that can be found in the Heidenhäusern ("old houses"), or in Heido, the name of the oldest bisse in Visperterminen in the Zermatt and Saas Fee valley.Introduced to the Valais in the Middle Ages, it has adapted to our vineyards perched on terraces at an altitude of over 1150 metres, the highest vines in Europe.
Slow, gentle pressing, an initial low-temperature fermentation at a maximum of 18°C and several months' ageing in vats, during which malolactic fermentation takes place in part, guarantee maximum roundness, while preserving the finesse and freshness of the aromas.
Dress : Yellow with golden highlights
Nose : Sweet notes of honey and camomile, fruity intensity of dried apricot, subtle aroma of brioche, hint of white pepper.
Mouth : A warm, velvety wine with exotic dried fruit and lime flavours, a balance of sweetness, freshness and complexity.
