Syrah
AOC Valais
Popular tradition links Syrah with the Iranian town of Schiraz. Syrah is the king of the Côtes du Rhône, where it produces the prestigious Côte-Rôtie and Hermitage wines. Since 1921, it has been established in the Valais thanks to the collection of grape varieties belonging to the agricultural engineer Henry Wuilloud at Diolly sur Sion.
Slow maceration over four weeks gently extracts the colour and tannins responsible for the structure of this red wine. This speciality is then matured in vats for 10 months, during which time it undergoes a second fermentation.
